Basic

Ingredients

Steak & Mash

Shopped for: Enough for 2 people

1lb Sirloin Steak

2 Yukon Gold Potatoes

1 Jalapeno pepper

1 yellow Onion

Total Cost - $ 10


Marinate sirloin steak w/ salt & pepper and Worcestershire sauce 30 minutes before cooking.


STEAK:

In saucepan heat some canola oil. On med heat drop steak in pan and cook on each side 4-5 minutes for medium steak (cook longer or shorter for desired temp).  Cover pan for 2-4 minutes for maximum juiciness!


MASH:

In microwave cook 3 or more Yukon gold potatoes for 4-5 minutes. Be sure to rinse and make a few knife slits prior.  Slice potatoes after microwave.

In a large pot sauté sliced and diced jalapeño pepper & onions and cook in canola oil.


After 3-4 minutes over medium heat add sliced potato and mix together. THEN add cup & ½ of milk or cream, half a stick of butter or butter substitute equivalent. Let ingredients cook down and mash potatoes with a potato masher! Add salt & pepper, garlic powder to taste and CHOW DOWN!

Wings & Cheese Steaks

Shopped for: Enough for 2 people

Package of 15 Wings

Blue Cheese

2 Rolls

½ lb of Roast beef

¼ lb White American Cheese

Onion

Red bell pepper

Total Cost - $10


WINGS:

Let wings sit on a plate in the fridge covered in foil or cellophane for 30 mines. In a large pot heat canola oil for 12- 15 mins and make sure it’s enough to drown wings completely.


Drop wings in oil carefully and let cook until golden brown… about 10-12 mins. Adjust heat depending if the wings are cooking too hot or not hot enough.


When finished in a large mixing bowl add 1 ½ cup of Franks Red Hot sauce and half a stick of butter. Microwave the mixing bowl for 30 seconds to melt the butter some. Add wings to bowl and mix until sauce is melted and covering the wings. Side of Blue Cheese and your all set to go!


CHEES SETAK:

1 lb of deli roasts beef.

Saute sliced online and Red Bell peppers for 3-4 minutes until cooked down. Add the roast beef and let the beef cook down and add Worcestershire sauce. When the beef is nice and brown add White American Cheese (enough to cover all the beef) when its all nice and melted remove from heat and on cutting board, slice it all up and add to toasted or Fresh Sub roll and CHOMP!!!

Chicken Parm Sub

Shopped For: Enough for 2 people

Package of 2 boneless & skinless Chicken breasts

Jar of Marinara sauce

2 Rolls

Shredded Mozzarella Cheese

Italian breadcrumbs

Total cost: $ 10


Chicken:


Pre Heat Oven to 375 degrees


Wash and dry skinless boneless chicken breasts.  Crack an egg in a bowl and mix with lil water. On a flat plate pour out enough Italian breadcrumbs to cover surface. DIP one breast at a time into egg wash let excess run off and then cover in breadcrumbs. Repeat until all pieces are covered.


In a large saucepan heat canola oil for 3-4 mins over medium heat.

Drop in breaded cutlets and let cook until crust is a nice golden brown.

Flip and repeat on other side. Sprinkle salt & pepper and garlic powder.


When both sides are golden on a large baking pan lay in cutlets, COVER in Marinara sauce and enough Mozzarella cheese to cover the cutlets. Let cook in oven until cheese is melted nicely. Take out chicken let cool for a minute. Slice long and fresh Sub rolls and put them in the oven for 2 mines, take out and lay in your cutlets and Savor the Awesome-ness!!!

Veggie Stir Fry

Shopped for: Enough for 2 people

2 veggie Chicken patties.

2 veggie sausages (Boca brand)

Red bell pepper

Jalapeno

Onion

Can or corn

Total cost $10


Chop veggie Chicken patties into small squares and slice veggie Sausages into thin round slices.


Slice Jalapeño, Onion & bell pepper.


In large saucepan, heat canola oil over medium heat.

Once HOT throw in Red bell peppers and onions. 1 minute later thrown in Chicken and Sausage. Sprinkle in garlic powder. Make sure there is ample oil in the pan to coat everything. After a min throw in Jalapeno pepper and a small can of corn.


With a big spoon or spatula, mix all the ingredients together over and over.

Coat everything with Soy sauce and a lil Worchester sauce & a little Franks Red Hot sauce. Let sauce get nice and hot then STIR a few more times (why it’s called Stir Fry) and Viola! You’re ready to eat healthy and delish!  Put on plate next to left over rice & beans and DIG IN!

Chicken Orange Tarragon

Shopped for: Enough for 2 people

Package of Chicken Thighs

1 ripe plantain

Box of Zatarans Spanish rice

1 quart of Orange juice

Fresh Tarragon

Total cost $ 10


Wash Chicken Thighs and pat dry with paper towel.

Un peel your ripe plantain and cut into ½ inch slices.

Box of Zatarans Spanish rice


Rice:

Coat bottom of small pot with canola oil. Once hot throw in Rice from box then throw in seasonings pack as well. Stir them together as they sizzle and after a minute pour in (Carefully) twice the amount of water as Rice.

It should SIZZLE! Let the water boil before covering and simmering for 7-10 mins. The take off heat and let sit.


Chicken: Pre heat oven to 400 degrees

Salt and Pepper to taste before cooking.

Heat canola oil in saucepan on medium heat. Once hot drop in Chicken.

Sprinkle Garlic powder. Once browned on both sides (2-3m mins each side) throw in, half stick of butter, cup of Orange juice and some fresh chopped Tarragon. COVER and let cook for another 5 mins.


Put whole pan in the oven and finish for another 7-10 mins.


Plantains:

While chicken is cooking in oven take sliced plantains and put them in another pan coated with canola oil on med heat. Let cook on each side for 2 mins or until golden brown. Put them on cutting board and press them with a spatula until flattened out.  Salt lightly, THEN put them back in the pan and finish cooking them on low to med heat for another 2-3mins.


Put rice on plate, chicken on top of rice plantains on side and cover with Orange Tarragon sauce and Dine with pleasure!

Herb Butter & White Wine Salmon

Shopped for: Enough for 2 people

Salmon fillets:

Half n Half

Lemon

Bag of Spinach

Total Cost $ 10


Coat saucepan with a little canola oil in med heat. Salt Salmon, then place in pan (Skin down) and take quarter stick of butter and put in pan next to the fish. Let melt. Flip Salmon after 2 mins. Add a lil more butter then quarter cup of White Wine. As that cooks down squeeze in half a lemon and add a touch of half & half. Cover and let cook for another 2 mins on med heat. Take off heat and let stand while you.


Chop spinach, Put in saucepan in heated up oil. Sprinkle w/ Garlic powder and as it sizzles cover in Soy sauce. Take off heat when it shrinks down (only takes 1-2 mins) Plate the Fish and Spinach and MUNCH!!
